Featured Recipe: Cool Cucumber and Avocado Soup

Healthy Eating Active Living has created this tasty and nutritious soup that is ideal for the warm weather coming. Try this cool and creamy soup in the warm seasons for a fresh change. No cooking required and ready in about 5 minutes!

Ingredients:

  • 1/2 English cucumber, peeled
  • 1 ripe avocado
  • 1 tsp minced garlic
  • 1 tbsp olive oil or coconut oil
  • 1 tsp ground coriander
  • 1 tbsp fresh parsley
  • 1 tbsp fresh cilantro
  • 2 limes juiced
  • dash of red pepper flakes
  • 1 tsp sea salt

Directions:

Using a food processor or blender combine all ingredients and puree until smooth. Add water 1/4 cup at a time until desired consistency is reached.
