Recipe of the Week: Ginger-Lime Salmon & Veggies

Here’s another great recipe from Healthy Eating Active Living. Short on time and looking for a quick meal?  Try Sue Sitki‘s recipe out tonight!  Pick up some fresh fish of your choice – I used wild pacific salmon, but Halibut or Rainbow trout would work just as well.

Ingredients

  • -Grate fresh ginger root all over fish – maybe 2 tbsp worth
  • – Zested a fresh lime and then squeezed all of the juice over the fish
  • – Cracked black pepper- maybe 1-2 tsp to taste
  • – Coarse sea salt

Process

Wrap in parchment paper and bake in oven at 380 deg for 40 minutes, or until fish will flake with a fork. Served with fresh steamed vegetables of your choice. I’m recommending sliced carrots, zucchini and rapini to complement the flavours. These can be cooked in another parchment package with a little ginger and fresh lime juice as well for about 20 minutes.
