Quick Kale Gazpatcho

HEAL has shared another fantastic recipe! This is a green twist on a typical tomato based soup. No cooking makes it perfect for the summer and it’s ready in less than 5 minutes.

5-8 kale leaves de-stemmed
1 leek
1 English cucumber
1/2 avocado
1-2 limes juiced
1/4 cup mint leaves
1/4 cup fresh cilantro
salt and pepper to taste
1-2 cups water as needed


Using a food processor combine all ingredients and blitz until smooth.
