Quick Spicy Bean Salad
Here’s another great recipe from Healthy Eating Active Living. Short on time and need a quick but healthy meal in minutes? This spicy bean salad is great as a meal, or as a side dish. Beans are high in protein and carbohydrates, and the fresh vegetables will give you lots of vitamins and minerals.
Ingredients:
1 can black beans (organic)
1 can kidney beans (organic)
2 cups cherry tomatoes, halved
1 red pepper, chopped
1 jalapeno, diced
1 sweet onion, chopped
1/2 cup cilantro
1/2 cup arugula
1 ear of corn, cut off the cob
1 avocado, cubed
1 zucchini, cubed
Dressing:
1/8th cup olive oil
3 limes juiced
pinch of sea salt
1/4 tsp paprika
1/2 tbsp ground cumin & coriander
Combine all salad ingredients in a bowl and toss with dressing
