Veggie Coconut Stew

A delicious hearty winter stew

Prep Time – 20 minutes
Cook Time – 1 hour 45 minutes
Servings – 6

Ingredients

  • 1 purple yam or sweet potato, peeled and cubed
  • 1 potato peeled and cubed
  • 2 carrots peeled and chopped
  • 2 white turnips peeled and cubed
  • 2 beets peeled and cubed
  • 1 red onion course chopped
  • 2 cups Brussel sprouts
  • 2 tbsp turmeric
  • 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1-2 fresh mint sprigs
  • 1 can Lite Coconut milk
  • 1 lb beef cubes or chicken strips

Instructions

  1. Pre-heat oven to 350F
  2. Wash, chop, and prep all veggies
  3. Place everything, including optional meat or tofu in the french oven or covered casserole dish.
  4. Mix spices with coconut milk and pour into the cooking dish.
  5. Cover
  6. Cook for 90-120 mins until veggies are tender.
  7. Stir a couple of times to mix the flavors together.
