Tomato, Cucumber & Basil Salad

Cool off this summer with cucumber salad. This salad can be picked directly from your garden and on your table in minutes. Thanks to Tara Postnikoff at Healthy Eating Active Living for this great summer recipe!

Ingredients:

2-3 cucumbers, peeled and cubed

2-3 cups of cherry tomaotes, halved

1/2 cup basil, fresh

1/4 cup mint, fresh

1 clove garlic, pressed

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tbsp fresh lemon juice

1/2 tsp sea salt

Method:

Chop cucumber and tomatoes as desired and place in medium bowl. Roughly chop or tear mint and basil. Mix olive oil, garlic, apple cider vinegar, lemon juice and sea salt together to form dressing. Toss all ingredients together and enjoy. A little goats feta would be a great topper to this salad.
